Bring the canner to a rolling boil. Once the water boils vigorously, set a timer and process the jars in a boiling water bath canner for the times indicated in the recipe below, adjusting the processing time for altitude if needed.<\/p><h3 class=\"wp-block-heading\">Step 7: Cool and Store<\/h3><p>When the processing time is up, turn off the heat and remove the lid. Let the canner settle for 5 minutes to adjust to the temperature change.&nbsp;<\/p><p>Spread a dry towel on the counter. Then, use the jar lifter to remove the jars and place them on the towel, spacing them a few inches apart. Keep them upright as you lift them out of the canner and place them on the towel, and don&#8217;t touch the lids or band yet. Let them cool undisturbed for 12 to 24 hours.&nbsp;<\/p><p>After at least 12 hours, check the seals by pressing the center of each lid. If the lid does not pop up, the jar is sealed. Wash the jars to remove residue, then store the sealed jars in a cool, dark place for 12 to 18 months. Give the relish 2 to 4 weeks to develop flavor. (See notes)<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Cool and Store the Jars:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-18978-step-5-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">When the processing time is complete, turn off the heat, remove the cover by tilting the lid away from you so that steam does not burn your face, and allow the canner to cool down and settle for 5 minutes.<\/div><\/li><li id=\"wprm-recipe-18978-step-5-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Spread a dry kitchen towel on the counter. Use a jar lifter to remove the jars one at a time from the canner. Keep the jars upright and place them on the towel. Do not tighten ring bands or test the seals yet. Let the jars sit undisturbed for 12 to 24 hours to cool.<\/div><\/li><li id=\"wprm-recipe-18978-step-5-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">After the jars have cooled for at least 12 hours, check to be sure the lids have sealed by pushing on the center of the lid. The lid should not pop up. If the lid flexes up and down, it did not seal. Place the jar in the refrigerator, and use within a month.<\/div><\/li><li id=\"wprm-recipe-18978-step-5-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Remove the ring bands, wash, label, date the jars, and store in a cool, dark place between 50 to 70\u02daF for 12 to 18 months. Once the jar is open, refrigerate and use it within a month. Yields about 7 pints or 14 half pints.<\/div><\/li><\/ul><\/div><\/div>\n\n<div class=\"wprm-recipe-notes-container wprm-block-text-normal\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3><div class=\"wprm-recipe-notes\"><span style=\"display: block;\">This tested safe canning recipe is from the <em>Ball Complete Book of Canning and Preserving<\/em>.
